Octopus Takoyaki

The octopus is versatile ingredient for various dishes. Takoyaki with octopus inside is part of Japan’s streetfood culture and one of Ralph’s signature dishes. As eaten at the opening event of Original Fish.

This recipe is ideal for 4 people as a main dish.

150 g flour
1 tsp baking powder
1 tsp dashi powder
2 dl water
3 eggs
1 tbsp soy sauce
150 g white cabbage
1 spring onion
100 g cooked pulpo
3 tbsp okonomi sauce e.g. Bulldog sauce
3 tbsp Japanese mayonnaise
1 tsp kombu powder
20 g katsuobushi

Method

For the batter, mix the flour with the baking powder, dashi powder, water, eggs and soya sauce. Finely chop or slice the vegetables. Mix everything with the batter.
Pour the batter into a takoyaki pan with a spoon and cut a piece of cooked pulpo with scissors and turn until golden brown. Serve on a plate.
Spread the okonomi and mayonnaise sauce on top and sprinkle with the katsuobushi flakes and spring onions.
Ralph’s tip:
– Takoyaki is a typical Japanese junk food similar to chips or hot dogs and is fried in a pan with small indentations and then turned over to give it its typical round shape. Originally, cooked squid is used instead of octopus
– As katsuobushi is finely sliced, the fine shavings move on contact with the warm dish
